The Micron® is a continuous crystallization system for the manufacture of fondant masses.

Micron® Candy Machine Chocotech

The unit is designed as a two step system. The first step is to super-saturate the cooked mass in a tempering screw followed by a partical size controlled beating screw which allows for different micron sizes depending on the set parameters of unit. A very fine fondant is achievable which can be used with different colours and flavours for fillings.  The units are designed for capacities ranging from 300 - 1500 kg/h, depending on recipe.
